It seems like everythings been nonstop recently! So to make up I will post a lovely recipe :]

So today we shall be baking Chocolate Gypsy Creams, a recipe I found in a cookery magazine i bought a couple of weeks ago
How yummy do they look?!
To make 12-14 biscuits
To make you will need:
For the biscuits
125g soft butter
125g golden caster sugar
1tbsp golden syrup
1 large egg yolk
175g plain flour
1tsp baking powder
1/2tsp ground ginger
50g dark chocolate
For the filling:
75g soft butter
100g icing sugar
1tbsp cocoa
1tbsp strong coffee (an espresso would do perfectly)
Preheat the oven to 160C/fan 140C/gas3.
Cream the butter and sugar until light and fluffy, mix in the syrup and the egg yolk.
Sift the flour, baking powder and ginger together and stir gently into the butter and sugar. Bring together to form a dough. Remove heaped teaspoons of the dough, roll them lightly into balls then put them onto nonstick baking sheets. Flatten slightly with the back of the spoon and bake for 15-20 minutes until golden, leave to cool.
To make the filling, beat the butter and sugar until light and fluffy, beat in the cocoa and coffee then use to sandwich the biscuits together like an oreo.
Break the chcolate into small pieces and melt in a glass bowl over a pan of simmering water, push all the biscuits together on the rack, then, using a teaspoon, drizzle the chocolate over them in lines, leave until the chocolate has set.
